walnut & date chia pudding

dating back to 7000 BCE, walnuts were called “Jupiter's royal acorn” by the Romans. walnuts's delicious texture and rejuvenating cognitive function will make this walnut chia pudding perfect for beginning a new morning & week!

(serves 4 & takes 10 minutes + overnight chilling)


1 cup raw walnuts

3½ cups water

6 large medjool dates, pitted

1 tbsp coconut oil

½ tsp vanilla extract

⅛ tsp cinnamon

1 pinch of salt

½ cup chia seeds


1. in a blender, blend the walnuts, water, dates, coconut oil, vanilla, cinnamon, & salt until smooth. pour the mixture into a bowl & stir in the chia seeds. cover the bowl & place in the refrigerator overnight.

2. in the morning, divide the chia pudding into 4 bowls & serve.
