enjoy this walnut apple coconut cake & you'll feel cozy & warm this Monday morning!

(serves 8 & takes 45 minutes)
ingredients
1 cup walnuts
10 tbsp unsalted butter
4 small apples, peeled, cored, & halved
¾ cup granulated sugar
1 cup all-purpose flour
1 tsp kosher salt
1 tsp baking soda
½ tsp baking powder
1½ tsp ground cinnamon
2 large eggs
½ cup your favorite yogurt (this is the best)
procedure
1. preheat oven to 350°F. on a baking sheet, toast walnuts 10 minutes. meanwhile, in a saucepan over medium, heat 2 tbsp butter. place apple halves cut-sides-down 5 minutes. flip & cook 5 minutes longer.
2. meanwhile, in a food processor, pulse toasted walnuts, flour, salt, baking soda, baking powder, & cinnamon. transfer to a medium bowl. in another medium bowl, combine sugar & 8 tbsp butter. beat in eggs. add half of walnut mixture, then yogurt, & finally the remaining walnut mixture.
3. place apple halves cut-sides-down in a skillet. pour batter around apples. bake 30 minutes. remove cake from skillet, slice, & serve.
