vegetarian chili with cilantro yogurt

enjoy this vegetarian chili with cilantro yogurt because its healthy ingredients will ensure an energetic & productive morning & day!

(serves 4 & takes 45 minutes)


1 tbsp extra-virgin olive oil 1 onion, chopped 1 poblano pepper, diced 2 tsp oregano 1½ tsp chili powder 1 tsp cocoa powder 3 medium tomatoes, diced

1 cup vegetable stock 1 15-oz can black beans, drained salt & pepper, to taste

1 cup Greek yogurt

1 tbsp fresh lime juice ¼ cup cilantro leaves


1. in a pot over medium heat, cook oil. add onion & poblano & cook 8 minutes. add spices & cook 1 minute. add squash & cook 10 minutes. add tomatoes, stock, & beans. simmer 25 minutes, until squash is soft. season with salt & pepper.

2. meanwhile, in a food processor, pulse yogurt, lime juice, salt, & pepper. add cilantro & pulse until incorporated.

3. serve chili with a dollop of cilantro yogurt.
