(serves 4 & takes 70 minutes)
ingredients
6 large Granny Smith apples
4 oz unsalted butter
1 cup apple cider
¾ tsp ground cinnamon
½ tsp kosher salt
½ vanilla bean, split lengthwise
1 tbsp bourbon (optional)
procedure
1. preheat oven to 350°F. place apples on a baking sheet & bake for 45 minutes. remove skins, core, & seeds. pulse in a food processor until coarse.
2. in a medium pot over medium heat, melt butter. add apple purée, apple cider, cinnamon, & salt. scrape in vanilla seeds. reduce heat to low, & cook, stirring occasionally, for 15 minutes. remove from heat & stir in bourbon (if using). serve in bowls.
