the herb-infused cake with sweet strawberries & tangy lime will make your Monday morning a healthy & productive super-one!
(serves 8 & takes 10 mins active + 50 mins idle)
¾ cup unsalted butter + more for greasing
10 sprigs thyme
¾ cup whole milk
1 tbsp finely-grated lime zest
¼ cup fresh lime juice
2 cups all-purpose flour
2 tsp baking powder
¾ tsp kosher salt
2 large eggs
¾ cup granulated sugar
3 tbsp strawberry jam
1 cup fresh strawberries, hulled & quartered
1. preheat oven to 350°F. in a small saucepan over medium, heat ¾ cup butter & thyme 5 minutes. meanwhile, in a small bowl, combine milk, lime zest, & lime juice. in a medium bowl, combine flour, baking powder, & salt.
2. in a large bowl, beat eggs & sugar. discard herbs & add infused butter to egg mixture. add half dry ingredients. add in milk mixture & add remaining dry ingredients.
3. pour half of batter into butter-greased baking pan. swirl with jam. pour remaining batter on top. scatter with strawberries. bake 50 minutes. remove cake from pan, slice, & serve.
