the creamy sesame butter with the lime-fragrant sweet potatoes will make your Thursday morning!
(serves 4 & takes 45 minutes)
3 large sweet potatoes
6 tbsp unsalted butter
¼ cup fresh lime juice
2 tbsp greek yogurt
1 tbsp soy sauce
2 tsp sesame oil
kosher salt & freshly ground pepper
sesame seeds & lime wedges, for serving
1. in a medium pot with a steamer, bring a few inches of water to boil. halve the sweet potatoes lengthwise & place in steamer. cover, reduce heat to medium, & steam for 30 minutes, until tender.
2. meanwhile, in a small bowl, smash together butter, lime juice, yogurt, soy sauce, & sesame oil until smooth. season with salt & pepper.
3. spread sesame butter on sweet potatoes, season with salt, & top with sesame seeds. serve with lime wedges.
