what's the only fruit with seeds on the outside? strawberries. in fact, they wear over 200 seeds on their silky red skin. whip up this stunning strawberry swirl cake & indulge your taste buds this Monday morning.

(serves 8 & takes 10 min + 40 min idle)
ingredients
8 oz strawberries, hulled, sliced lengthwise
1 cup + 3 tbsp granulated sugar + more for pan
kosher salt
¾ cup extra-virgin olive oil + more for pan
2 cups all-purpose flour
½ tsp baking powder
½ tsp baking soda
2 large eggs + 2 large egg yolks
½ cup + 2 tbsp plain yogurt
2 tbsp finely grated lime zest
3 tbsp fresh lime juice
2 tsp vanilla extract
½ cup strawberry jam
procedure
1. preheat oven to 350°F. in a medium bowl, toss strawberries, 1 tbsp sugar, & a pinch of salt. let sit.
2. grease baking pan with oil & sprinkle with sugar. in a medium bowl, whisk flour, baking powder, baking soda, 1 cup sugar, & 1 tsp salt. in a large bowl, whisk eggs, egg yolks, yogurt, lime zest, lime juice, & vanilla. add dry ingredients to yogurt mixture. fold in ¾ cup oil.
3. place batter in prepared pan. dollop jam onto batter & swirl surface. arrange reserved strawberries on top in rows. sprinkle with 2 tbsp sugar. bake cake 40 minutes, slice, & serve.
