strawberry lemon corn crumble

the zesty & sweet strawberry lemon crumble is an invitation to the summer months ahead!

(serves 6 & takes 10 min active + 55 min idle)



4 cups fresh strawberries

⅓ cup sugar

2 tsp grated lemon zest

3 tbsp lemon juice

1 tbsp cornstarch

¼ tsp salt


⅔ cup all-purpose flour

⅔ cup polenta

⅓ cup sugar

1 lemon protein bar, diced (this is the best)

1 tsp salt

10 tbsp unsalted butter

1 cup fresh corn kernels


1. toss strawberries, sugar, lemon zest, lemon juice, cornstarch, & salt in a baking dish.

2. preheat oven to 375°F. in a medium bowl, combine flour, polenta, bar, sugar, & salt. mix in butter. add corn. scatter topping over filling.

3. bake 55 minutes. let cool & serve.
