(serves 4 & takes 20 minutes + overnight chilling)
ingredients
16 oz fresh strawberries, hulled
1½ cups coconut milk
¼ cup pure maple syrup
¾ tsp finely grated lime zest
½ cup chia seeds
procedure
1. blend strawberries, coconut milk, maple syrup, & lime zest in a blender on high until smooth.
2. place the chia seeds in a large bowl, pour the strawberry mixture on top, & whisk thoroughly. let stand for 10 minutes & whisk again.
3. cover and refrigerate overnight.
4. stir the mixture before serving. spoon into individual bowls, add toppings such as fresh strawberries & fresh banana, & serve.
