on a strawberry streak (what can I say, strawberries are in season here in California & are the juiciest & most delicious fruit. enjoy this strawberry cake with buttermilk glaze this Friday morning!

(serves 8 & takes 30 minutes)
ingredients
8 tbsp unsalted butter, melted
2 tbsp granulated sugar
½ cup honey
½ cup + 4 tbsp buttermilk
2 tsp lime zest
2 tsp vanilla extract
2 large eggs
1½ cups all-purpose flour
¾ cup cornmeal
2 tsp baking powder
½ tsp kosher salt
2 cups fresh strawberries, hulled & halved
½ cup powdered sugar
procedure
1. preheat oven to 350°F. grease cake pan with butter. in a large bowl, mix butter, sugar, honey, ½ cup buttermilk, lime zest, & vanilla. add eggs, one at a time, beating after each addition. add flour, cornmeal, baking powder, & salt. fold in strawberries.
2. place batter in prepared pan. bake 25 minutes. meanwhile, whisk together powdered sugar & 4 tbsp buttermilk. drizzle this glaze over cake & serve.
