stone fruits grilled cheese

a few weeks ago, I ate a grilled cheese with stoned fruits at The Farmer's Wife in California, & it was fresh, healthy, & delicious. the innovative combination of stone fruits & white cheddar will make you ready to create a world you never before imagined this MNDAY morning!


(takes 30 minutes & serves 4)

ingredients

4 tbsp fresh apricots, sliced

2 tsp granulated sugar

2 tbsp water

2 tbsp unsalted butter

8 slices whole wheat sandwich bread

8 oz aged white cheddar, thinly sliced

4 fresh nectarines, chopped into cubes

4 fresh plums, chopped into cubes

salt & pepper, for seasoning

wildflower honey, for drizzling

procedure

1. to make the stewed apricots, heat a pan over medium heat. place the apricots, sugar, & water in the pan, cover with a lid, & cook until the fruit is soft.

2. heat a skillet over medium heat. lightly butter the bread slices on both sides. place cheddar on top of each of 4 bread slices. leave all the slices over the heat until the cheese is melted.

3. take all the bread slices off of the heat & top those with cheese, with stewed apricots, nectarine slices, & plum slices. season the fruit with salt & pepper, & drizzle with honey.

4. cover the sandwiches with the remaining 4 bread slices. cut the sandwiches diagonally & serve.
