this spiral peach bread is half project, half recipe, so it's an amazing breakfast to create on a Monday morning to start the week off with energy & creativity!

(serves 8 & takes 25 min + 170 min idle)
ingredients
½ cup + 2 tbsp warm water
¾ tsp instant dry yeast
1 tbsp + ½ cup sugar
2 cups + 2 tbsp all-purpose flour
1 tbsp extra-virgin olive oil 3 tbsp unsalted butter
2 ripe peaches, cut into wedges
1 large egg beaten
procedure
1. in a large bowl, combine ¼ cup water, yeast, & a pinch of sugar. let sit 5 minutes. add flour, oil, 1 tbsp sugar, ¼ tsp salt, & ¼ cup + 2 tbsp water. knead 10 minutes. transfer dough to lightly oiled bowl. cover with plastic wrap & leave to rise in warm spot, 1½ hours.
2. preheat oven to 350°F. mix ½ cup sugar & butter. roll dough into 10" by 15" rectangle. scatter with peaches. roll up dough & twist into a spiral. transfer into parchment-lined baking pan. cover & let rise in warm spot, 45 minutes.
3. brush dough with beaten egg & bake 35 minutes, until golden brown.
