spinach & goat cheese quiche

these two ingredients, spinach & goat cheese, pair perfectly. during these troubling times, let's reach out to those who need it, perhaps just a phone call or a Zoom chat - to make this time at least a little bit brighter.

(serves 4 & takes 70 minutes)


1 large sweet potato, cut into ⅛" slices

1 tsp olive oil

1 small white onion, diced

1 large roma tomato, diced

5 oz spinach

½ tsp kosher salt

freshly ground pepper

6 large eggs

cup almond milk

½ cup goat cheese crumbles


1. preheat oven to 375°F. grease a round quiche pan with nonstick cooking spray. add sweet potato slices all around the base & into the sides (as if it were the crust). spray sweet potatoes with additional nonstick cooking spray. bake for 20 minutes. keep oven heat on.

2. meanwhile, over medium-high heat, in a medium skillet, cook onion & tomato over olive oil for a few minutes. add spinach & cook until spinach wilts. remove from heat.

3. in a medium bowl, whisk eggs, almond milk, ¼ tsp salt, & pepper. add spinach mixture over baked sweet potato crust, then pour egg mixture over the top. sprinkle with goat cheese crumbles, ¼ tsp salt, & pepper. bake for 40 minutes & serve immediately.
