soda bread

in celebration of Ireland's win in the Rugby World Cup yesterday, I made Irish soda bread for breakfast. when you spread melting butter on the warm, freshly-made bread, you, too, will feel like a winner this MNDAY morning!


(serves 8 & takes 55 minutes)

ingredients

1 cup plain Greek yogurt

1 cup buttermilk

3¼ cups all-purpose flour

½ tsp sugar

1 tsp salt

½ tsp baking soda

butter & marmalade, for serving

procedure

1. preheat oven to 450ºF. in a medium bowl, mix together the yogurt & buttermilk.

2. in a large bowl, sift together the flour, sugar, salt, & baking soda. make a well in the center of the dry ingredients & pour in the wet ingredients. mix until combined.

3. pat the dough into a round shape & place it on a parchment paper-lined baking sheet. cut a deep cross in the dough & poke a hole in each of the four corners.

4. bake for 15 minutes, then turn the oven down to 400ºF & bake for another 30 minutes. let cool slightly. serve warm with butter & marmalade.
