scrambled eggs & guacamole toast with chives

the melting-moment scrambled eggs with the fresh guacamole & slightly spicy chives will give you the perfect bold breakfast this morning!

(serves 4 & takes 10 minutes)


3 tbsp fresh chives, minced

2 tbsp crème fraîche

6 large eggs

2 tbsp unsalted butter

kosher salt & freshly ground black pepper

4 large slices of sourdough

1 avocado, pitted & peeled


1. in a large bowl, combine 2 tbsp chives, crème fraîche, & eggs. in a large nonstick skillet over medium-low, melt butter. add egg mixture & season with salt & pepper. cook until just set, 4-5 minutes. set aside.

2. place 1 slice of toast on each plate. in a small bowl, mash avocado with fork, & season with salt & pepper. spread mashed avocado over each slice of toast. place eggs above. sprinkle eggs with 1 tbsp chives, & season with pepper.
