for the fifth day of COVID-19 MNDAY BFAST, the caramel flavor of the pears with the smoky taste of bacon will create a happy dance in your mouth this morning!
(serves 4 & takes 25 minutes)
6 oz bacon, cut into ¼" cubes
4 ripe pears, quartered
kosher salt & freshly ground pepper
1 tbsp whole grain mustard
3 tbsp + 2 tsp olive oil
½ cup walnuts
1. in a large saucepan over medium heat, cook bacon for 10 minutes. drain bacon & keep 1 tbsp bacon fat from skillet.
2. season pears with salt & pepper. over medium-high heat, cook with the 1 tbsp bacon fat for 7 minutes. place on a serving platter.
3. meanwhile, in a small bowl, combine mustard, 3 tbsp olive oil, salt, & pepper. in another small bowl, toss walnuts with 2 tsp olive oil & salt. pour dressing on pears, & top with walnuts & bacon.
