this mouthwatering roasted pumpkin seed hummus will serve as the greatest hummus you have ever tasted because of its pronounced flavor of warm spices & zesty lemon juice.
(serves 8 & takes 30 minutes)
1½ cups raw pumpkin seeds
1 tbsp + ½ cup + more for drizzling olive oil
1 tsp smoked paprika
1 tsp chili powder
kosher salt & black pepper
1 can chickpeas, drained
juice of 1 lemon
1. preheat oven to 350°F. on a baking sheet, toss pumpkin seeds, 1 tbsp olive oil, ½ tsp smoked paprika, ½ tsp chili powder, salt & pepper. roast for 20 minutes, stirring once after 10 minutes.
2. in a food processor, purée roasted pumpkin seeds, chickpeas, lemon juice, ½ cup olive oil, ½ tsp smoked paprika, ½ tsp chili powder, salt, & pepper. place hummus in a bowl with a drizzle of olive oil & serve.
