roasted cherry tomatoes & scrambled eggs

the tomatoes' juices will explode in your mouth, while the scrambled eggs will feel smooth. while you are eating this yellow dish, listen to Coldplay's hit song, yellow.

(makes 4 servings & takes 1 hour)

roasted cherry tomatoes

2 pints yellow cherry tomatoes, halved crosswise

2 stems of thyme, leaves stripped off

flaky sea salt, for sprinkling

1 ½ tbsp extra virgin olive oil

procedure

1. preheat oven to 300°F.

2. arrange tomatoes on a baking sheet cut-sides up.

3. sprinkle with thyme & salt, & drizzle with oil.

4. bake until just shriveled, about 1 hour.

scrambled eggs

8 large eggs

¼ cup whole milk

¼ tsp salt

3 tbsp unsalted butter

chopped chives, for serving

procedure

1. whisk together eggs, milk, & ¼ tsp salt.

2. melt butter in a large skillet over medium-low heat.

3. cook eggs, stirring continuously until scrambled, yet moist, about 8 minutes.

4. remove from heat & sprinkle with chives.
