ricotta with berries & maple syrup almonds

this light & fresh BFAST will brighten your MNDAY morning as will the almonds' sweet crunch!

ricotta with berries & maple syrup almonds

(makes 4 servings & takes 10 minutes)


2 tbsp unsalted butter

3 tbsp blanched sliced almonds

1/8 tsp fleur de sel

1/3 cup pure maple syrup

2 cups ricotta

2 tbsp honey

1 tsp vanilla extract

2 cups mixed berries, such as blackberries & strawberries

1 baguette, sliced & toasted


1. melt butter in a small sauce pan over medium heat. stir in almonds, tossing frequently for 3 minutes until almonds are golden brown.

2. sprinkle almonds with fleur de sel & add maple syrup. keep almond mixture warm.

3. meanwhile, combine ricotta, honey, & vanilla. divide ricotta mixture among serving plates.

4. surround ricotta mixture with berries & spoon almond mixture over ricotta mixture.

5. place a few slices of baguette on each plate.
