ricotta & cardamom honey grapefruit

I tasted the best cardamom bun at Fabrique Bakery earlier this week, & I needed to make cardamom-something for breakfast today. the sweet cardamom syrup drizzled over the creamy ricotta and fresh citrus fruits will turn your first MNDAY morning in March 2020 into a delicious feast!

(takes 45 minutes & serves 4)


6 whole green cardamom pods, lightly crushed

¼ cup water

½ cup honey

1⅓ cups fresh ricotta

1 pink grapefruit, sliced into wedges

2 navel oranges, sliced into wedges

sea salt & freshly ground pepper

½ cup walnuts, halved

8 slices of your choice of bread


1. in a small saucepan, toast cardamom over medium-high heat. add water & honey. stir to combine. bring to a boil, then reduce heat & simmer for 5 minutes.

2. arrange 4 plates with ricotta & place the grapefruit & orange slices over the ricotta.

3. drizzle with the cardamom honey & sprinkle with black pepper. top with the walnuts & arrange 2 slices of bread per plate. serve.
