rice bowl with fried egg & avocado

what's your favorite color? mine is orange, so I enjoyed this colorful plate this morning. the fresh avocado & runny yolk is a melange not to miss!

(serves 4 & takes 6 minutes)


4 scallions, thinly sliced

2 cups cooked rice (my favorite is RightRice!)

1 tsp red wine vinegar

kosher salt & freshly ground pepper

3 tbsp olive oil

4 large eggs

1 avocado, chopped

hot sauce, for serving


1. in a small bowl, combine scallions, rice, & vinegar. season with salt & pepper.

2. in a nonstick skillet over medium-high heat, heat oil. crack eggs into skillet. season with salt & pepper, & cook 1 minute. flip & cook to preferred "doneness" (30 sec for runny yolk). divide rice among bowls, & top with eggs, avocado, & hot sauce.
