pecan blondies

to all mothers out there, thank you, you're the greatest! the crunchy toasted pecans atop the blondies will make this Monday breakfast recipe perfect for sharing with your mothers and continuing the festivities!

(serves 8 & takes 40 minutes)


1½ cups unsalted butter

3 large eggs

2½ cups granulated sugar

2 tsp kosher salt

2¾ cups all-purpose flour

1½ tsp baking powder

1½ cups pecans, chopped


1. in a medium saucepan, cook ½ cup butter, 5 minutes. in a medium bowl, combine brown butter, 1 egg, ¾ cup sugar, ½ tsp salt, & ½ cup flour.

2. preheat oven to 350°F. butter baking dish. in a medium bowl, combine baking powder, 1½ tsp salt, & 2¼ cups flour. in a large bowl, beat cup sugar & 1 cup butter. add 2 eggs one at a time. mix in dry ingredients. fold in ½ the pecans.

3. place batter into prepared dish. dollop brown butter mixture & remaining batter on top. scatter remaining pecans above. bake 30 minutes, slice, & serve.
