this melting moment clafoutis looks like the night sky filled with moons. reach for the moons this MNDAY morning!

pear clafoutis

(makes 6 servings & takes 1 hour)

ingredients

2 ½ tbsp unsalted butter, plus extra for buttering dish

3 ripe pears, scooped into balls with a melon baller

3 large eggs

1 ⅓ cups almond milk

½ cup sugar

½ cup all-purpose flour

¼ tsp ground cinnamon

¼ tsp salt

confectioners’ sugar for dusting

procedure

1. preheat oven to 375°F & butter a baking dish.

2. melt the butter in a skillet over medium heat, add pear balls, & cook, stirring occasionally, until pears are lightly caramelized, about 4 minutes. scatter pears with their brown butter in prepared dish.

3. in a blender, combine the eggs, milk, sugar, flour, cinnamon, & salt until smooth.

4. pour batter over pears & bake until pale golden, about 40 minutes.

5. serve warm dusted with confectioners’ sugar.
