peanut butter rice crispy treats

enjoy this grab & go breakfast so that you can go read in your little nook or go look out the window at the sprouting green leaves this Sunday morning (that is very sunny where I am!).

(makes 16 squares & takes 40 minutes)


3¼ cups rice krispies cereal

¼ cup cacao nibs

1 tbsp coconut oil

¾ cup peanut butter

¼ cup raw honey

1 tsp kosher salt

½ tsp vanilla extract


1. in a large bowl, toss cereal & cacao nibs.

2. in a small saucepan over medium-low heat, melt oil with peanut butter, honey, & salt & whisk until smooth & thinner. remove from heat & add vanilla.

3. pour peanut butter mixture into cereal mixture & stir. place into a parchment-lined pan & press down with the bottom of a glass to compact. chill in refrigerator 30 minutes, or until firm.

4. cut bars into 16 squares & serve.
