one of my favorite breakfasts so far, this peach parfait with a crumble mixes fresh, zesty, sweet, creamy, & spicy all in one bowl! enjoy a delicious spoonful of this exciting new bowl & enjoy.

(serves 4 & takes 35 minutes)
ingredients
⅔ cups graham crackers, finely crushed
⅓ cup all-purpose flour
1 tsp kosher salt
¼ cup + 1 tsp granulated sugar
6 tbsp melted + 2 tbsp unsalted butter
2 ripe peaches, cut into wedges
2 tbsp granulated sugar
1 tbsp + 1 tsp fresh lime juice
1 cup fresh raspberries
1 cup heavy cream
raspberry jam, for serving (this is the best made with dark chocolate, habanero peppers, & local raspberries)
procedure
1. preheat oven to 325°F. in a food processor, pulse graham crackers, flour, salt, & ¼ cup granulated sugar. place in medium bowl & add melted butter. on a rimmed baking sheet, scatter crumble & bake 12 minutes.
2. meanwhile, in a medium bowl, toss peaches, sugar, & 1 tbsp lime juice. in a large skillet over medium, cook peaches, 5 minutes.
3. in a small bowl, mash raspberries. mix in 1 tsp sugar & 1 tsp lime juice. in a medium bowl, beat cream to form medium peaks. divide peaches among bowls & top with whipped cream, raspberries, & graham cracker crumble. dollop raspberry jam & serve.
