orange polenta cake

I got this scrumptious recipe from a lady I spoke with on the subway one morning pre-COVID-19. check out my TEDx talk on the importance of speaking with strangers this morning as you delight in the orange polenta cake!


(serves 8 & takes 55 minutes)

ingredients


½ cup canola oil

1 cup light brown sugar

3 large eggs

1 tsp vanilla extract

1½ cups flour

1½ cups polenta flour

orange zest of 1 medium orange

2 tsp baking powder

a pinch salt

2 tbsp + ½ cup freshly squeezed orange juice

a pinch ground cardamom

pistachios, for topping

procedure

1. preheat oven to 350°F. in a medium bowl, combine oil & ¾ cup sugar. add eggs, vanilla extract, flour, polenta flour, orange zest, baking powder, salt, & 2 tbsp orange juice.

2. grease cake mold with nonstick cooking spray, pour batter into mold, & bake 50 minutes, until golden brown.

3. meanwhile, in a saucepan over medium-low heat, stir ½ cup orange juice, ¼ cup sugar, & ground cardamom, until thick. pour orange syrup over warm cake & serve with pistachios.
