oats with peaches & cashew cream

the tender peaches and the crunchy cashew cream come together with the soft oats, and it is this combination that will bring you serenity on this MNDAY morning!

oats with peaches & cashew cream

(takes 30 minutes & serves 4)


1 cup cashews

3½ cups filtered water

3½ tbsp pure maple syrup

3 tsp fresh lime juice

¼ tsp sea salt

1 cup rolled oats

1 tbsp canola oil

3 ripe but firm peaches, cut into small chunks


1. to make the cashew cream, place the cashews, ½ cup water, maple syrup, lime juice, & sea salt into a blender & blend on high until smooth. set aside.

2. to make the oats, place 3 cups water (can be substituted for equal quantities of almond milk or coconut milk) over high heat to boil. add the oats & simmer for 10 minutes.

3. to make the peaches. heat a pan over medium heat. add the oil & maple syrup & swirl them together. add the peaches & toss everything together. let the peaches cook, stirring every couple of minutes, for about 10 minutes total, until they are soft.

4. serve the oats with peaches & dollop with the cashew cream.
