the subtly tart & sweet pomegranate paired with the nutty oat pancakes will make for the perfect balance of motivation and inspiration on your MNDAY morning!
(takes 20 minutes & serves 4)
1½ cups oatmeal
2 tsp baking powder
½ tsp cinnamon
2 large ripe bananas
1 tbsp maple syrup
1 cup your favorite unsweetened milk
1 tsp vanilla
pinch of sea salt
coconut oil, for cooking
1 cup greek yogurt
½ pomegranate, seeds removed
2 tsp pure maple syrup
1. combine all the oatmeal pancakes ingredients in a blender and blend until smooth.
2. heat pan over medium heat & drizzle coconut oil onto pan. make a few rounds of pancake batter on the pan & cook until bubbles appear on sides of rounds. flip. once bubbles appear on sides of pancakes, remove from heat.
3. meanwhile, mix the yogurt, pomegranates, & maple syrup in a small bowl.
4. serve pancakes with a dollop of pomegranate yogurt.
