mint honey avocado toast

the many shades of green on this dish will bring you a rejuvenating & youthful spirit on this Sunday morning!

(takes 20 minutes & serves 4)


1 cup water

1 cup fresh mint leaves

¼ cup honey

4 slices sourdough bread

8 tbsp plain greek yogurt

1 tsp vanilla extract

2 medium avocados

flaky salt, for sprinkling


1. to make the mint honey, bring the 1 cup of water to a boil. remove from heat. add the mint & the honey & let the mint steep for 15 minutes, until cool. strain. meanwhile, toast the bread.

2. mix together the mint honey (leave a bit aside for drizzling), yogurt, & vanilla extract.

3. spread the yogurt mixture on each of the 4 toasted slices of bread. cut the avocado into thin slices & arrange them so that they completely cover the yogurt mixture.

4. drizzle each avocado toast with the remaining mint honey, sprinkle with flaky salt, & serve.
