mint & ginger mango salad

the zesty lime & ginger with the fresh mint mixed together in the creamy yogurt will give you the perfect balance this Monday morning!

(serves 4 & takes 10 minutes)


3 medium mangoes, peeled & thinly sliced

3 medium apples, thinly sliced

2 tbsp lime juice

½ cup plain yogurt

2 tbsp mango protein shake (this is the best)

2 tbsp honey

1 tsp fresh ginger, minced

¼ tsp salt

¼ cup fresh mint leaves, thinly sliced


1. in a large bowl, combine mangoes & apples. add 1 tbsp lime juice.

2. in a small bowl, combine yogurt, honey, ginger, salt & 1 tbsp lime. stir into mango mixture. sprinkle with mint & serve.
