maple cinnamon popcorn granola with pot de crème

the maple cinnamon popcorn granola & the pot de crème will add spice, zest, & excitement to your Monday morning.

(makes 2 cups & takes 10 min idle + 45 min bake)


1½ cup popped popcorn (this is the best)

¼ cup pumpkin seeds

¼ cup sliced almonds

¼ cup unsweetened coconut chips

cups raw pecans

3 tbsp pure maple syrup

2 tbsp extra-virgin olive oil

2 tbsp light brown sugar

yogurt or pot de crème (this is the best)


1. preheat oven to 300°F. in a large bowl, combine ingredients.

2. spread on a parchment-lined rimmed baking sheet. bake 45 minutes. season with salt & toss granola. let cool. serve it with yogurt or a pot de crème.
