these fresh & healthy compotes on top of your yogurt will make your late-spring MNDAY morning colorful & energetic!
(makes 6 servings & takes 1 3/4 hours)
ingredients
yogurt
1 quart plain yogurt
carrot compote
1 lb carrots, thickly grated
1 lemon, zested, then juiced
1 1/2 cups sugar
1 1/2 cups water
mango compote
2 lb ripe mangoes, peeled & chopped
1 lemon, zested, then juiced
1/3 cup sugar
1/3 cup water
procedure
1. for carrot compote: mix all ingredients in a saucepan & bring to a boil. reduce to a simmer & stir occasionally until carrots are glassy & liquid is syrupy, about 1 1/2 hours. cool completely.
2. for mango compote: mix all ingredients in a saucepan & bring to a boil. reduce to a simmer & stir occasionally until liquid is syrupy, about 25 minutes. cool completely.
3. serve yogurt with compotes on top. add your favorite toppings like coconut flakes, chia, hemp, nuts, & raisins.
