macadamia ricotta & tomatoes toast

this BFAST is more of a color palette than a plate as it is inspired by Kandinsky's "Concentric Circles," and its bold flavors & colors will have you taking risks this MNDAY morning!

macadamia ricotta with tomato toast

(takes 15 minutes & serves 4)


1 cup macadamia nuts

1 tbsp fresh lemon juice

¼ cup basil leaves, minced

8 tablespoons filtered water

¼ tsp kosher salt

8 slices whole grain bread, toasted

½ pound tomatoes, sliced ¼ inch in thickness


1. rinse macadamia nuts & place in blender with lemon juice, ⅛ cup basil, water, & salt. blend on high for 1 minute, until consistency is fluffy.

2. spread macadamia ricotta on toasted bread & top with tomatoes. sprinkle ⅛ cup basil & serve.
