enjoy this lime curd, yogurt, & granola bowl for breakfast this Monday morning. the zesty lime, juicy berries, & tart mint will energize you for your most productive Monday yet!
(serves 4 & takes 15 minutes + setting overnight)
¾ cup granulated sugar
4 tsp lime zest, grated
½ cup lime juice (from 3-4 limes)
pinch of salt
2 large eggs + 3 egg yolks, beaten
4 tbsp unsalted butter
3 cups yogurt
berries (I used blueberries), for serving
granola, for sprinkling
1. in a medium saucepan, whisk sugar, 1 tbsp lime zest, lime juice, salt, & beaten eggs. over medium heat, cook, whisking constantly for 6 minutes, until thickened. remove from heat & add butter.
2. place mixture in bowl & press plastic wrap directly onto surface & let cool to room temperature. stir in remaining 1 tsp lime zest. cover & refrigerate overnight.
3. in the morning, place yogurt in 4 bowls. top with fruits, lime curd, & granola. serve.
