filled with the sentiment of innovation from watching SpaceX Falcon 9 land on the International Space Station this morning & mark a huge development in space travel, I made this lemon & tomato tart, & its original combination will spark novel ideas for you this morning.

(serves 6 & takes 40 minutes)
ingredients
1 sheet frozen puff pastry, thawed
all-purpose flour, for dusting
1 garlic clove, finely grated
2 tbsp olive oil
1 lemon, thinly sliced
6 springs of thyme
3 medium tomatoes, sliced ¼" thick
kosher salt & freshly ground pepper
crème fraîche, for serving
procedure
1. preheat oven to 375°F. on a lightly floured baking sheet, roll out puff pastry. using a fork, make holes in pastry, leaving a 1" border around edges.
2. in a small bowl, combine garlic & 1 tbsp olive oil. brush pastry with garlic oil, except for edges. arrange lemon slices, tomatoes, & thyme on top. season with salt & pepper, & drizzle with 1 tbsp oil.
3. bake 30–35 minutes. drizzle with more olive oil, top with a dollop of crème fraîche, & serve.
