these lemon ricotta pancakes are a delicious variation to the classic pancakes. the tangy lemon flavor with the smooth & fluffy ricotta texture will brighten up this MNDAY morning for you & your table!

(serves 4 & takes 30 minutes)
ingredients
1½ cups all-purpose flour
3½ tbsp granulated sugar
2 tsp baking powder
¼ tsp baking soda
½ tsp salt
1 cup milk
¾ cup ricotta
3 large eggs
1 tsp vanilla extract
2 tbsp lemon zest
¼ cup fresh lemon juice
1 tbsp unsalted butter, melted
pure maple syrup, to taste
procedure
1. in a bowl mix together the flour, sugar, baking powder, baking soda, & salt. make a well in center of flour mixture & set aside.
2. in a separate bowl, whisk together the milk, ricotta, eggs, vanilla, butter, lemon zest, & lemon juice. pour the milk mixture into the flour mixture & whisk to combine.
3. heat a skillet over medium heat & once hot, place some butter on the pan so that the pancakes do not stick.
4. pour rounds of batter onto the pan & cook until bubbles begin to form on the surface. flip & cook the opposite side until it is golden brown.
5. serve warm, drizzled with maple syrup.
