lemon coconut bars

the tangy lemon flavor of these bars will make you feel as zesty as you did on the warm summer days when you sold lemonade as a child. feel this lemony zeal in your mouth as you savor this MNDAY morning!

lemon coconut bars

(takes 40 minutes & serves 4)

ingredients

1½ tbsp chia seeds

3 tbsp lemon juice

1 cup oat flour

½ tsp baking powder

½ tsp sea salt

¾ cup shredded dried coconut

2 tbsp lemon zest

2 tbsp canola oil

2 tbsp applesauce

¼ cup pure maple syrup

6 medjool dates, pitted

procedure

1. preheat oven to 300° F & grease a small baking pan.

2. in a small bowl, mix the chia seeds & lemon juice. set aside.

3. in a medium bowl, mix the oat flour, baking powder, salt, dried coconut, & lemon zest.

4. in another bowl, mix the canola oil, applesauce, maple syrup, & soaked chia seeds. finely chop the medjool dates & add them to the wet ingredients.

5. pour the wet ingredients into the dry ingredients & spread this mixture on the the baking pan.

6. bake for 25 minutes. cut into small squares & serve.
