this recipe makes enough for 4 servings, but these crispy latkes are so good, that you may need to make double the recipe because your entire family (or just you;)) will finish them fast!
(serves 4 & takes 15 minutes)
1 onion, grated (large side of box grater)
3 large russet potatoes, peeled & grated (large side of box grater)
1 ½ teaspoon kosher salt
¼ teaspoon fresh ground black pepper
2 eggs, lightly beaten
¼ cup all-purpose flour
canola oil, for frying
1 cup Greek yogurt
chives, thinly sliced, for garnish
1. in a large bowl, mix grated onion, potatoes, salt, & pepper. stir in eggs & flour. 2. heat a large skillet with ½" oil. spoon 2 tbsp batter into oil & cook, turning once, until golden on each side. transfer to a paper towel to drain. 3. serve warm with a dollop of yogurt & a sprinkling of chives.
