honey apple & goat cheese tarts

I hope you had a wonderful & safe Thanksgiving! these honey apple & goat cheese tarts bring together tart, sweet, spicy, & acidic flavors, making them the perfect Monday morning breakfast delights.

(makes 6 & takes 15 min + 35 min idle + overnight freeze)

ingredients

2 17.3-oz packages frozen puff pastry, thawed

1 egg

6 oz fresh goat cheese

1 tbsp fresh lemon juice

¼ tsp coarse kosher salt

3 medium red apples, peeled, cored, cut in ⅛" cubes

3 tbsp unsalted butter, melted

¾ cup honey

½ tsp ground allspice

procedure

1. on lightly floured surface, roll out puff pastry & cut into 16 total rounds. divide 8 of the pastry rounds between 2 parchment-lined baking sheets. pierce rounds all over with a fork.

2. cut out 3½" diameter rounds from center of the remaining 8 rounds. brush outer 1" edges of non-ring rounds with beaten egg. top each with 1 pastry ring. freeze overnight.

3. in the morning, preheat oven to 375°F. in a bowl, combine cheese, lemon juice, & salt. spread mixture inside rings of pastry rounds. overlap apple slices on top. in a small bowl, mix butter & ¼ cup honey. brush over apples. sprinkle with allspice. bake 35 minutes. drizzle 1 tbsp honey over each & serve.
