hibiscus coconut yogurt

the fresh hibiscus & coconut flavors will give you the perfect boost of exuberant energy this Monday morning!

(serves 4 & takes 10 mins active + 1 hour idle)


2 cups dried hibiscus

2 tbsp fresh lemon juice + more, if needed

1 tsp vanilla extract

granulated sugar, to taste

yogurt, for serving

honey, for drizzling

walnuts, for serving

shredded coconut, for serving


1. in a blender, combine hibiscus, lemon juice, & vanilla, adding more lemon juice if needed. add sugar 2 tbsp at a time to taste. place, covered, in the freezer for at least 1 hour or until the hibiscus purée resembles apple sauce texture.

2. meanwhile, divide yogurt into 4 bowls. drizzle with honey. pour a strip of hibiscus purée on the yogurt. top with walnuts & coconut & serve.
