these heavenly hash browns feel like a fluffy melting-moment & the cayenne pepper will spice up your Tuesday morning!
(serves 4 & takes 30 minutes)
3 russet potatoes, peeled
freshly ground pepper & kosher salt, to taste
a pinch of cayenne pepper
4 tbsp unsalted butter
1. using largest holes on a box grater, grate potatoes. transfer to a bowl of cold water & stir for 1 minute. drain & rinse potatoes under cold running water. transfer to a large kitchen towel & wring out liquid.
2. transfer potatoes to a medium bowl & toss with pepper, salt, & cayenne. over medium-high heat, heat 4 tbsp butter in a large nonstick skillet. add potatoes & cook, undisturbed, for 5 minutes. using a spatula, stir occasionally for 10 minutes, adding more butter if pan becomes dry. drain with paper towels & season with salt.
