ham & chives scramble

I arrived to St. Andrews on Saturday morning & have been impressed by the shades of green that coat the rolling hills. the deep green shade of the chopped chives that garnish the scrambled eggs will similarly impress you this MNDAY morning!

(takes 10 minutes & serves 4)


8 large eggs

2 tbsp fresh chives, chopped

4 slices of ham, cut into small squares

salt & pepper, to taste

½ tbsp unsalted butter

4 slices of your favorite bread, toasted


1. in a medium bowl, crack the eggs. add the chives, ham, salt, & pepper. whisk until all the ingredients are completely combined.

2. heat a pan over medium-low heat. once hot, add the butter, & then add the egg mixture.

3. cook the eggs, stirring continuously for 5 minutes. serve the eggs onto 4 plates.

4. place a slice of your favorite bread on each plate & serve.
