grapefruit & pistachio greek yogurt

Thanksgiving just passed, so I wanted to say thank you to everyone who supports MNDAY BFAST:) the time is sweet & grateful, so let us enjoy a colorful & vibrant dish for breakfast this MNDAY morning!

(takes 15 minutes & serves 4)


1 pink grapefruit

2 cups greek yogurt

8 leaves fresh mint

¼ cup pistachios

2 tbsp olive oil

sea salt, to taste


1. peel the grapefruit & slice the fruit into ¾” segments. 

2. roughly chop the pistachios.

3. spread as much yogurt as desired onto each of 4 plates. arrange the grapefruit slices on top & sprinkle with chopped pistachios & mint leaves. drizzle with olive oil & sea salt, & serve.
