goat cheese ricotta cake with strawberries

this soft & fluffy goat cheese ricotta cake pairs great with the fresh & juicy strawberries for the 45th day of COVID-19 breakfasts!

(serves 4 & takes 45 minutes)


unsalted butter, for pan

½ cup granulated sugar

6 oz fresh goat cheese

½ tsp finely grated lemon zest

½ tsp fresh lemon juice

½ tsp vanilla extract

3 large eggs

tbsp all-purpose flour

¾ pint fresh strawberries, hulled & quartered


1. preheat oven to 350°F. butter round pan & dust with sugar. in a large bowl, beat goat cheese, lemon zest, lemon juice, vanilla, & cup sugar. mix in egg yolks & flour.

2. in a medium bowl, beat egg whites until soft peaks form. fold egg whites into goat cheese mixture. pour batter into prepared pan. bake cake 30 minutes. serve with strawberries.
