gingerbread pancakes

these deliciously cozy gingerbread pancakes will warm your morning up this Friday morning & 39th day of COVID-19 breakfasts.

(serves 4 & takes 20 minutes)


¾ cup Greek yogurt

2 tbsp unsalted butter, melted

2 eggs

1 cup whole milk

¼ cup dark brown sugar

¼ cup maple syrup + more for serving

2 cups all-purpose flour

1½ tsp baking powder

½ tsp baking soda

½ tsp kosher salt

2 tsp ground cinnamon

2 tsp ground ginger

½ tsp ground nutmeg

1/8 tsp ground cloves


1. in a medium bowl, combine yogurt, butter, eggs, milk, sugar, & ¼ cup maple syrup. 2. in another bowl, combine flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, & cloves. fold dry ingredients into wet ones.

3. over medium heat, coat a pan with nonstick cooking spray. ladle rounds of batter into pan. in batches, cook pancakes on one side for 2 minutes, flip the pancakes & cook for 30 seconds.

4. remove pancakes & cover with foil until serving time. repeat process & serve with remaining maple syrup.
