eggs with paprika aioli

faster, easier, & more delish than devil eggs, these eggs with paprika aioli will start your 17th morning of COVID-19 breakfasts on an elegant note!

(serves 4 & takes 20 minutes)


4 large eggs

4 parsley sprigs, finely chopped

¼ cup mayonnaise

½ tsp paprika

kosher salt


1. bring water in a small saucepan to boil. add eggs to water & cook untouched for 8 minutes. meanwhile, prepare a bowl with ice water.

2. in a small bowl, combine mayonnaise & paprika.

3. place hard-boiled eggs into ice water 5 minutes. slice eggs in half (lengthwise) & sprinkle with salt. top with paprika mayonnaise & parsley & serve.
