dragon fruit & pear breakfast bowl

imagine seeing the dragon fruit, this bright pink fruit with green claws for the first time. scary, right? to begin the celebration of Day of the Dead this MNDAY morning, the dragon fruit, native to Central America, is the perfect delight.


(serves 4 & takes 8 minutes)

ingredients

2 fresh & ripe dragon fruits, halved

2 fresh & ripe pears, halved

1 tbsp freshly squeezed lime juice

⅛ tsp fresh ginger, grated

4 tbsp greek yogurt

2 tbsp your favorite granola

procedure

1. using a melon baller, scoop the pears & the dragon fruits.

2. in a small bowl, toss the fruit with the lime juice & ginger until combined.

3. divide this mixture into 4 bowls (or as I did, divide the mixture into the 4 halves of dragon fruit skins).

4. top with a dollop of greek yogurt & a sprinkling of granola.
