dark chocolate breakfast quinoa bowl

extremely nutritious & filled with energy, the quinoa (or how it's pronounced, keenwah), will boost your vigor on this MNDAY morning!

(takes 40 minutes & serves 4)

ingredients

1 cup toasted quinoa, (I love this one!)

1 cup almond milk

1 cup coconut milk

2 tbsp unsweetened cocoa powder

3 tbsp pure maple syrup

chopped fresh fruit & chia seeds, for serving

procedure

1. in a medium pot, add the quinoa, almond milk, & coconut milk, & stir. bring to a boil, then reduce heat to low & simmer for 15 minutes, uncovered, stirring occasionally.

3. turn the heat off, cover the pan, & let sit for 10 minutes. remove from heat & stir in cocoa powder & maple syrup.

4. serve the quinoa into 4 bowls & top with fresh fruits & chia seeds.
