the creamy sautéed arugula with the crispy mustard breadcrumbs will create the perfect breakfast this Monday morning. if you want to make something special (& healthy) for your moms on mother's day, this is your recipe!
(serves 2 & takes 20 minutes)
½ cup coarse breadcrumbs
5 tsp mustard (this is the best)
2 tsp + 1 tbsp olive oil
½ tsp mustard seeds
9 oz fresh arugula
3 tbsp your favorite milk
1 tsp fresh thyme
2 large eggs
1. preheat oven to 400°F. in a small bowl, combine crumbs, 2 tsp mustard, 2 tsp oil, & mustard seeds. place on baking sheet. bake 7 minutes.
2. meanwhile, cover bottom of skillet with water. add arugula & cook until wilted. place in sieve to pour out liquid.
3. in a medium saucepan, combine arugula, 3 tsp mustard, milk, & thyme for 3 minutes. season with black pepper. remove from heat.
4. in skillet over medium-high heat, pour 1 tbsp oil. crack eggs into skillet & cook 4 minutes. divide spinach into 2 plates & top with eggs & crumbs.
