cranberry oat cookies

the rich oats & fresh cranberries mix to delicious breakfast cookies for this Monday morning!

(makes 25 & takes 35 minutes)


2 cups old-fashioned oats

1 cup pecans, chopped

1 cup all-purpose flour

1 tsp kosher salt

½ tsp baking soda

½ tsp ground cinnamon

¾ cup unsalted butter

1 cup granulated sugar

1 large egg

2 tbsp pure maple syrup

1 cup dried cranberries


1. preheat oven to 425°F. on a baking sheet, spread oats & toast 6 minutes. add pecans & toast 6 minutes more. reduce oven heat to 350°F. in a medium bowl, combine flour, salt, baking soda, & cinnamon. add oats & pecans.

2. in a large bowl, beat butter & sugar. add egg & syrup. add dry ingredients & cranberries. make small rounds of dough on parchment-lined baking sheets. bake 15 minutes. serve.
